As promised, potato salad.


This post is unrelated to my lovely baby.  A complete 180 of what is normally written about, I will document my latest attempt at the "Priority potato salad."  

For those who don't know, Priority is a car dealership in Hampton Roads.  Last year, they opened a brand new, gigantic new building that has a nail salon, hair salon, movie theatre and cafe.  (Side note for clarity: My parents, Andrew and I all bought cars from Priority last year.)  Mom and I needed to get oil changes a few weeks ago so we brought our cars in to have them serviced.  We went around lunch time and decided to have lunch at their cafe. That is when we were smacked up side the head with an amazing potato salad... from a car dealership.  How peculiar. 

We re-created the potato salad for the 4th of July and it was a hit.  Here is my attempt at the recipe, which I made this afternoon and tried to document through photos and mental notes.  If you decide to make it, let me know how it turns out for you!

Priority Potato Salad

3-4 lbs of red potatoes
1/2 cup of red onion, sliced
2 handfuls of fresh green beans, cleaned and ends trimmed
1/4 cup of capers
3 hard boiled eggs, sliced
2 tbsp fresh dill
**The original Priority potato salad had 1 cup of cherry tomatoes sliced in half and 1/4 cup of sliced black olives, both of which were omitted today because I do not enjoy either. **


Dressing:
3 tbsp dijon mustard
1 1/2 - 2 tbsp mayonaise
1/4 cup of olive oil
2 tbsp apple cider vinegar
1 tbsp splenda (or regular sugar if you wish)
salt and pepper


Slice the potatoes.


Cook them until you feel they are done.  I keep tasting them so I am not sure how long it takes.



Slice the red onions thinly.



Clean the beans and trim off the ends. Blanch them in boiling water for about 2 minutes.



Drain the capers.



Hard boil your eggs.



Assemble all of the ingredients in the bowl, here comes the dressing.

Mix the mayonaise and mustard together first.  Add the vinegar, sugar, salt & pepper.  Lastly add in the oil.  Adjust to taste.  If you like it tangier, add more mustard.  Less tangy, add more oil.  Just play around with the ingredients until it suits your fancy.


Our finished product. Yummy!

potato salad from a car dealership. possible the foulest phrase i can imagine.
it looks good though.

you guys talk about priority so much, i feel like i need to go there.
you should be in commericals.

If it makes you feel better, I am pretty sure the food is catered and not made at the dealership. haha.
